1 cup brown or green lentils, rinsed
1 large onion, diced
2 carrots, peeled and diced
2 cloves garlic, minced
1 can (14 oz) crushed tomatoes
4 cups vegetable broth
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon ground ginger
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and carrots, cooking until they begin to soften (about 5-7 minutes).
Stir in the minced garlic, cumin, turmeric, and ginger. Cook for 1 more minute until the spices are highly fragrant.
