Hearty Moroccan-Inspired Spiced Lentil Soup

This Moroccan-Inspired Spiced Lentil Soup is a nutritional powerhouse, packed with plant-based protein and an array of warming spices that will fill your kitchen with an irresistible aroma. Ingredients:

  • 1 cup brown or green lentils, rinsed

  • 1 large onion, diced

  • 2 carrots, peeled and diced

  • 2 cloves garlic, minced

  • 1 can (14 oz) crushed tomatoes

  • 4 cups vegetable broth

  • 1 teaspoon ground cumin

  • 1/2 teaspoon ground turmeric

  • 1/2 teaspoon ground ginger

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and carrots, cooking until they begin to soften (about 5-7 minutes).

  2. Stir in the minced garlic, cumin, turmeric, and ginger. Cook for 1 more minute until the spices are highly fragrant.

  3. Add the rinsed lentils, crushed tomatoes, and vegetable broth. Stir well to combine.

  4. Bring the soup to a boil, then reduce the heat to low, cover, and let it simmer for 30-35 minutes, or until the lentils are completely tender.

  5. Season with salt and pepper to taste. For a thicker consistency, you can blend a small portion of the soup and stir it back in.

  6. Serve hot with a slice of crusty bread for dipping.
